Handmade macarons are so special because of the their complex baking process, which involves five key factors:

1. Meringue Quality

The foundation of any handmade macaron is the meringue. Meringue serves as the structural skeleton of the shell, and it relies on the precise denaturation of the proteins in the egg whites.

As the egg mixture is whisked, it physically unfolds the protein chains and traps air bubbles within them. This creates a stable meringue foam.
